Truly from Scratch:
Before food was called art- it was called trade. We view ourselves as tradespeople. We are excited about ingredients and making food truly from scratch. This often means learning a new trade and applying it to our menu. Here is a list of things we currently make from scratch in house or hope to make in the future:
Hot Sauce- We make our own hot sauce called Pow Pow Sauce. We hope to add other flavors in the future.
Jams and Jellies- We make all of our jams and jellies in house from scratch weekly.
Butters- we blend our own compound butters and we used to churn our own butter. Because of high demand we've been unable to continually churn butter but plan to add that back to the business soon.
Meats- We source our meats already cut from local sources. We are learning to butcher, cure and smoke meats and will be bringing in whole animals to begin making our own hams, bacons and sausages within a few months.
Cheese and Cultured Creams- We often make our own simple cheeses but are currently learning to produce/store some more complicated aged cheeses. We often make our own buttermilk and are learning to also make our own cultured sour cream.
Grits- We have learned to mill our own corn to make freshly milled grits and will be switching our very own milled grits soon.
Flour- We have spent the last year learning about the art of flour milling and grain production. We are working with local farms to plant enough grain for us to begin milling our own flours hopefully within the next year.
Herbs- We grow a large amount of our own herbs but will expand our growing capacity and add new herbs when spring comes.
Fruits and Vegetables- We work with local farms and learn all about each local fruit we use. We have a few fruit trees but unfortunately not enough space or capacity to grow our own. We sometimes joke about getting our own farm but that would be way in the future.
Pickles- We make all of our pickles in house. we use abundant seasonal produce instead of letting it go to waste.
Cookie Crusts- We make all of our cookie crusts used for pie baking completely from scratch daily. They are way better than store bought.
Retail is a large part of our truly from scratch mentality. We plan to have each and every one of these items available for sale by spring time.
